It is often a challenge to prepare healthy, tasty meals in a short amount of time. Not only is the preparation time consuming, but the clean up of a well balanced meal is sometimes daunting. Here is a recipe for a great dish that can be prepared with minimal mess and dishes. It is well balanced enough that it can serve as your only course, if you so desire!
Cheesy Chicken with a Kick Casserole:
3 cups shredded rotisserie chicken meat, skin removed 1 TBSP canola oil 1 medium onion, chopped 1 medium green or red pepper, chopped 1 tsp minced garlic 6 oz (3/4 c) chicken broth 1 can cream of mushroom soup 1 can cream of chicken soup 1 can Rotel diced tomatos with chiles, drained 1 tsp dried oregano 1 tsp ground cumin 1 tsp chili powder 2 1/2 cups shredded cheddar cheese
3 cups crushed lime tortilla chips
Preheat oven to 350 degrees. Heat canola oil over medium high heat. Add onion and saute 6 minutes until tender. Add bell pepper and garlic. Saute 3-4 minutes. Add chicken broth, and both cream soups. Stir. Add Rotel, oregano, cumin, and chili powder. Heat another 5 minutes or so. Layer 1/2 of chicken in a greased 9x13 pan. Top with half of soup mixture and 1 cup cheese. Cover with half of chips. Repeat once. Top with last 1/2 cup of cheese. Bake at 350 for 45 minutes, or until bubbly. Serve with sour cream dollop if desired.
